Ok, so you think you’ve had good banana bread. You think your own recipe for banana bread is just fine. Trust me, once you’ve made this banana bread, it will change the way you look at banana bread. This recipe is PERFECT! It’s moist, banana-ish, even the crust is delicious! I was surprised at how good this turned out. Seriously. Make the banana bread.
For the banana bread (makes one loaf):
- 1/2 cup (1 stick) butter, MELTED
- 1 cup sugar
- 2 eggs
- 1 tsp. vanilla
- 1 1/2 cups flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 cup sour cream
- 2 bananas, mashed
1. Preheat your oven to 350 degrees F. Grease a 9×5 loaf pan. 2. In a large bowl, stir together the melted butter and sugar. Add the eggs and vanilla, mix well. Combine the flour, baking soda and salt, stir into the butter mixture until smooth. Finally, fold in the sour cream and bananas. Spread evenly into the prepared pan. 3. Bake for 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Cool loaf in the pan for 10 minutes before removing to a wire rack to cool completely.
