Atomic Fireball Cupcakes


These really taste like atomic fireballs, but they’re not super spicy, they taste more like the sweet center of the fireball. My friend said that these are probably her new favorite cupcake. If you like cinnamon candies, you will love these cupcakes. For a prank you could tell everyone that they are strawberry. I almost did that but decided against it:) Seriously though, these cupcakes really capture the flavor of atomic fireballs.

For the cupcakes (makes 24):

  • 1 cup water
  • 20 atomic fireballs
  • 3 cups flour
  • 1 Tablespoon baking powder
  • 1 teaspoon salt
  • 2 sticks softened butter
  • 1 1/2 cups sugar
  • 4 eggs

1.  Add the atomic fireballs to the water in a small bowl and let it sit for at least 30 minutes. Remove the fireballs from the water. 2. Preheat the oven to 350 degrees F and line 24 cupcake tins with cupcake liners. 3. In a large bowl, cream the butter and sugar. Add the eggs and beat well. Add the remaining ingredients and beat until just combined. 4. Fill the baking cups 3/4 full and bake for 20-22 minutes or until a toothpick inserted in the center comes out clean. 5. Let the cupcakes cool and then frost them.

For the frosting:

  • 2 sticks butter, softened
  • 3 cups powdered sugar
  • 1 Tablespoon imitation cinnamon extract
  • red food coloring

1. Beat together all the frosting ingredients until light and fluffy. You could add some atomic fireball water if you wanted to (just let some atomic fireballs soak in water for a little while. Frost the cupcakes.
