Brownie Cake w/ PB Frosting

This stuff is SO GOOD. The combination of brownies and peanut butter and frosting, can you honestly tell me that anything can top that?!?!?! Of course, if you don’t like peanut butter… or brownies… or delicious things… you won’t enjoy these cupcakes. I can’t even tell you how amazing these are. I think that they are my favorite cupcakes (and that says a lot, I make cupcakes and/or cakes at least once or twice a month, if not more). I have made both cake and cupcakes and both turned out fine. I have used a boxed brownie mix and just added and extra egg for a shortcut for the homemade brownie recipe here:

For the cake (or 18 cupcakes):

  • 1 cup butter
  • 2 cups sugar
  • 5 eggs
  • 2 tsp. vanilla extract
  • 2/3 cup cocoa powder
  • 1 cup flour
  • 1/2 tsp. salt
  • 1/2 tsp baking powder

1.Preheat oven to 350 degrees F (175 degrees C). Prepare pans (if you’re doing cake, use shortening and then dust with flour, it works amazingly) 2.In a large saucepan, melt cup butter. Remove from heat, and stir in sugar, eggs, and vanilla. Beat in  cocoa,  flour, salt, and baking powder. 3.Spread batter into prepared pans (or into muffin tins with cupcake liners).Bake in preheated oven until toothpick inserted in the center comes out clean. Do not overcook.

For the frosting:

  • 1 1/2 sticks of butter
  • 3 cups powdered sugar
  • 1-2 Tbs. milk
  • 2 Tbs. peanut butter

1. Beat the butter and powdered sugar until thoroughly combined. Add milk to reach desired consistency. Then add the peanut butter. 2.Frost cake or cupcakes and enjoy.
